Tacos are staple at my house. I make them at least once a week, and fish tacos are my favorite!
These are really filling and delicious, despite the fish making them a little on the lighter side. The blackened fish is the ultimate taco meat. What really makes the fish so good, is the mixture of spices that you rub on the outside.
They key to perfect blackened fish is the level of spice. You want allll the spices in your rub. It gives it that charred feel, and it gives the fish a heavy flavor.
I chose to go with Tilapia because I feel like it is a really versatile fish. It is sort of bland, so that gives me a lot of room to work with when adding flavors.
My favorite way to prep fish has always been my Lemon Garlic Tilapia. But these tacos are serious Tilapia competition. (how many times can I say Tilapia in one sentence? Tilapia.)
We cannot forget, the avocado cilantro sauce you make to go on top. It is a light, zesty, beautiful green sauce that gives the tacos the best tangy flavor.
You want to start by putting together your spices for you fish. I combined paprika, garlic powder, black pepper, salt, cayenne pepper, cumin, brown sugar (yes, so good), and oregano.
Now divide your spice mixture among your fish filets and rub it on the real heavy.

You want them 100% covered with a nice thick layer of rub.
Now, drizzle some Olive Oil into your skillet. and once it gets nice and hot, throw the filets in the hot oil.

Cook for about three minutes on each side, or until they get a good brown char on them.
Now: for the sauce.
Toss your fresh Cilantro (key word: fresh), Avocado, Sour Cream, and fresh Lime juice in your food processor.
If you don't have a food processor, a blender will work too!
Assemble your tacos however you like them. I added some of my leftover Roasted Corn, Avocado, and Feta salad, fresh Avocado, and drizzled some of my cilantro cream sauce.. SO good!

Full Recipe:
3 fish filets of your choice
Corn or Flour tortillas
2 tbl olive oil
For your blackened fish:
1 1/2 tsp paprika
1 tsp dried oregano
1 tsp garlic powder
3/4 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp salt
1/2 tsp brown sugar
For the avocado sauce:
1/4 cup sour cream
1/2 ripe avocado
1 tbl chopped fresh cilantro
Juice from 1/2 lime
1 tbl water
salt to taste
1. Prep your spice mix by combining all spices into a bowl.
2. Season your filets generously. Rub all of the seasoning evenly over your filets, creating a thick coating. Repeat on both sides.
3. Prep your avocado sauce by blending all the ingredients in a food processor (or blender) until your desired consistency is reached, add more water if you would like.
4. Heat your oil in a large skilled on medium-high heat. Add your fish to the hot skilled and cook on each side for 4 minutes each, until each side is blackened. (your fish may fall apart/flake easily.)
5. Assemble your tacos and devour until stuffed :)
