Roasted Corn, Avacado, & Feta Salad


This salad tastes as good as it looks! Best part about it? Chop up your favorites, and throw it together. SO easy and so good! These veggies pair perfectly together and the Feta cheese makes it even better.


Full Recipe:
Two Cucumber
One package of grape tomatoes, diced
One red onion diced
Two ears of corn, off the cob
One Avacado
Feta Cheese to taste
Salt & Pepper to taste

1.Chop your corn off the cob and throw into a skillet over medium heat with a teaspoon of Olive Oil for 5-8 minutes, stirring frequently.
2. Chop rest of ingredients into bite size pieces, toss together with salt, pepper, and Feta cheese. Add corn to veggie mixture.
3. Toss with skillet corn.
Optional: Serve leftovers on TACOS. :) Because what recipe isn't better with tacos?
